Chicken and Chips recipe for cocktail parties

Cocktail parties are parties at which cocktails are served. It is sometimes called a cocktail reception. A cocktail party organized for purposes of social or business networking is called a mixer.
Small chops are the basic meal that’s served in most cocktail party; and chicken and chips are example of small chops. They’re attractive, appetizing, suitable for most cocktail party and delicious
Today, we’ll giving recipe on how to make chicken and chips for your cocktail parties:
1 free-range chicken, jointed into 6 pieces (2 breasts, 2 legs, 2 wings)
100ml olive oil
2tbsp freshly ground black pepper
1tsp sea salt
2tsp dried rosemary
1tsp chilli powder (optional)
For The Fries
5-6 non-floury potatoes
1 litre sunflower or vegetable oil
Sweet and sour sauce
1 cup pineapple juice
1/4 cup rice vinegar
2 tablespoons soy sauce
1/2 cup turbinado sugar (or cane)
1/4 cup ketchup
1 teaspoon red chili flakes
1/2 teaspoon white pepper
2 tablespoons cornstarch mixed with
1/4 cup water
Method of Preparation
- For the chicken, put all the ingredients (including the chilli, if using) in a freezer bag and massage the chicken all over with the oil, pepper, salt and rosemary. Refrigerate for 2 hrs or overnight.
- Preheat the oven to 200°C/400°F/Gas Mark 4. Remove the chicken from the freezer bag and transfer to a roasting tray. Cook in the oven for 40-45 mins, until the juices run clear when you insert a skewer into the thickest part of the leg meat.
- Meanwhile, make the fries. Peel the potatoes and slice into match stick-sized piece. Add the oil to a large frying pan, wok or deep fat fryer then cook on a medium heat for around 15 mins until the fries become crisp and golden. Drain on kitchen paper and serve with a piece of chicken
For the sweet and sour sauce
Mix all ingredients except cornstarch and water in a small saucepan.
Bring to a boil, then reduce to a simmer.
Mix cornstarch and water together.
After sauce has been simmering for 20 minutes, add the cornstarch mixture.
Simmer 15-20 minutes more, or until nice and viscous
